These little yummy bites of goodness pack a great nutritional punch and will keep your energy levels up anytime you need a pick-me-up. They're a great post-yoga/workout snack, or anytime snack when you need a boost. Full of healthy protein, antioxidants, fats and natural sugars from the sticky medjool dates. Chewy, chocolately, creamy, delicious. They are also really quick to make, and will keep well in the fridge. This quantity makes between 15 and 20 bites, dependent on the size you roll them. If you'd like to add more protein, try a nice variation of rolling them in shelled hemp seeds, or if you'd like to boost the energy even more, try adding a teaspoon of maca powder.
100g almonds (you could use other nuts if you prefer)
200g medjool dates (stones removed)
2 tablespoons raw cacao powder
1 tablespoon almond butter
1 tablespoon coconut oil
1-2 tablespoons chia seeds
1 tablespoon water
a pinch of pink himalayan salt / good quality sea salt
Whizz the almonds in a food processor until they are well-ground with a few crunchy pieces left.
Add all the other ingredients, and blend until everything is mixed well, and it becomes a little sticky
Roll into bite size balls.
Pop in the freezer for about an hour, then store in an airtight container in the fridge
