Berry Banana Pie

I made this amazing dessert for my cookery evening last week and it went down a storm so I wanted to share it with you all.  Its raw, vegan and gluten free, and tastes completely divine.  Its an impressive light dessert for a dinner party, and none of your guests will ever guess how healthy it really is.

 

Ingredients

Crust

1/4 cup soft dates

3/4 cup almonds (soaked overnight, rinsed and dried)

 

Filling

2 bananas

4 cups fresh or frozen berries (blueberries or stawberries would be great, or a mix of both)

1 cup soft dates

 

Method

  • Make the crust first.  Combine date and nuts in a food processor, process to the desired consistency, like bread crumbs.  Press into a 9 inch pie plate, good to use your hands to press it down

 

  • Thinly slice the bananas, and place over the nut crust to cover the bottom.  Reserve any left over banana for the filling

 

  • Combine 1 cup soft dates with 1 1/2 cups berries and any remaining banana in the food processor and process until well blended

 

  • Add the remaining berries and pulse to mix well but keep some texture

 

  • Pour the mix into the pie, smooth out over the top and refrigerate until ready to serve

 

  • Top with some fresh berries to serve
