Celeriac and Pear Soup

So this week in my organic veg/fruit delivery from great local providers, Helens Bay Organics, I got pears and celeriac and remembered this super simple and very tasty soup recipe so I'd like to share it with you.  Celeriac is an odd looking root vegetable, but it has a wonderful slightly sweet and nutty celery flavour and makes a lovely smooth texture when pureed.  Its also lovely as mash.   If you're looking for fast healthy food, that will also warm you up as the evenings get cooler, then try this out and let me know what you think.  I know it sounds weird, but give it a go and you'll get a pleasant surprise!


Ingredients

1 1/2 lb pears peeled, cored and cut into slices

couple of tablespoons light flavoured organic oil such as sunflower or light olive oil 

1lb celeriac, peeled and roughly chopped

2 pints veg stock

sea salt and freshly ground black pepper to taste

Optional - a swirl of cream / yoghurt (non dairy version to keep it vegan) and a garnish of your choice


Method

  • Poach the pears in about 1/2 pint water until they are tender.  Blend the pears and water together and set aside
  • Heat the oil gently in a large pot.   Add the celeriac and saute for about 10 minutes or more until tender
  • Add the stock and blended pears.  Bring to the boil, then reduce heat and simmer for 10 minutes
  • Add any seasoning to your taste
  • Blend the soup
  • Serve as is, or with a swirl or cream & /or garnish
