Chocolate Chia Energy Bars

Delicious nutritious home-made energy bars are WAY better than shop-bought, and are packed full of health-boosting ingredients including antioxidants & phytonutrients, healthy fats, and energy-boosting foods.   They are super easy to make, no baking required, and they keep well in the fridge or freezer so you'll always have a great chocolatey healthy treat to hand when you need it.  They are great for pre or post workout, for after yoga, taking out on hikes etc as a real boost to keep your energy levels balanced. Vegan & gluten free, and only natural sugars.   You'll need a good quality food processor for this recipe.

Ingredients

350g medjool dates (take out the stones)

1/3 cup raw cacao

75g chia seeds

1/2 cup unsweetened desicated coconut

125g walnuts

50g oats (use gluten free if you need to)

1 tsp vanilla extract

1/4 tsp pink salt / sea salt

70g chopped high % dark chocolate (the higher %, the lower the sugar)

Method:

Blitz the dates in a food processor until they form a paste.  Add walnuts, and blitz to combine.  Add the rest of the ingredients and blend until they form a thick dough.  Line a baking tray with parchment / baking paper, then press the mixture firmly into a square / rectangle.  Place in the freezer for at least a few hours to firm the mixture, then you can cut into bars and either store in the freezer or fridge.
