Chocolate Coconut Granola

This gorgeously crunchy yummy granola is grain free, gluten free, vegan, and free from processed / refined sugars, and tastes amazing.  It makes a wonderful breakfast with fresh berries, and served with non-dairy milk / coconut yoghurt, but its also totally delicious as a snack straight from the jar.  Packed with super foods, and crammed with nuts and seeds, you'd never guess how crazy healthy it is.  Thanks to my student, Jenny Grainger for sharing the original recipe. 

 

Ingredients: (try to seek out all organic ingredients where possible)

3 cups coconut chips / flakes

2 cups mixed nuts

1 cup mixed seeds

2 tablespoons chia seeds

1 teaspoon ground cinammon

a pinch of sea salt / pink himalayan salt

1/4 cup melted coconut oil

4 tablespoons plant-based liquid sweetener (such as date syrup, maple syrup, coconut blossom nectar)

1/2 cup raw cacao

2 tablespoons raw cacao nibs

Method:

Heat the oven to 150C

Line a baking tray / tin with parchment

Pulse the nuts in a food processor until roughly chopped

Mix all the ingredients in a large bowl

Spread evenly on the tray

Bake for about 40 minutes, after 20 minutes turning over the granola to ensure even cooking and crunchiness.  If you prefer more crunch, bake a little longer taking care it doesn't start to burn, or turn the oven down for longer baking.

Leave to cool completely, then store in an airtight jar
