Cream of Brocolli and Cauliflower Soup (vegan)

At this time of the year, nothing beats a comforting warming bowl of nourishing home-made soup.  This delicious, highly nutritious creamy soup is so simple and quick to make, and no-one will believe its vegan! 

Ingredients

1 tablespoon raw virgin coconut oil

1 large bunch of brocolli

1 head of cauliflower

3 cups of veg stock

1 can organic coconut milk

Optional – 1-2 teaspoons dried dill and dried basil

Salt and pepper to taste

Method

  • Melt the coconut oil on a low heat, then add in the veg and saute for a little time.

  • Add in all other ingredients, simmer until the veg are fork tender.

  • Blend the soup until smooth
