Creamy Courgette Humous

This is a delicious raw light version of humous - so no chick peas or olive oil, but buckets loads of taste in a much lighter package.  Perfect for summer lunches and picnics.

Tahini (ground up sesame seed paste) is a great addition to your diet, particularly when following a healthy plant-based diet as its high in B vitamins and a brilliant source of calcium (much greater than in milk/dairy products).

Its so simple to make, and only a few ingredients so whip up a batch now and enjoy!

Ingredients

2 medium courgettes, peeled and chopped

4 tablespoons organic tahini

juice of a fresh lime (add more or less according to your taste)

1/2 to 1 teaspoon sea salt (again, adjust to your taste, start with less, and then gradually add as needed)

1/2 teaspoon ground cumin

 

Just blend everything together in a blender or food processor.  A hand-held stick blender can also handle this recipe too.

Serve up with lots of raw veg, or use as a salad dressing or sauce for raw dishses.  Also great on crackers or as a sandwich spread
