Home-baked Maple Coconut Granola

Looking for a tasty wholesome start to your day? This is so more-ish you'll find yourself wanting to enjoy it as a healthy snack anytime, not just for breakfast! Packed full of complex carbohydrates, fibre, key vitamins and minerals, proteins and healthy essential fats.  Feel free to play with the recipe, make your own tweaks with ingredients and flavours. 

 

Ingredients  (this is for a large batch that I make, its so tasty the smaller quantity doesn't last long enough, but feel free to reduce it by half on your first go if you like!)

6 cups jumbo oats

1 cup each of raw sesame seeds, sunflower seeds and pumpkin seeds

1 cup walnuts coursely chopped

1/4 teaspoon high quality sea salt

1/2 teaspoon ground cinnamon

1 teaspoon pure vanilla extract

1 cup maple syrup

1 cup melted raw virgin coconut oil (put the jar in a jug of hot water to melt it)

1 cup unsweeted coconut flakes

 

Method

Preheat oven to 180C

Line a couple of roasting tins with baking paper/parchment etc

In a large bowl mix together the oats, seeds, nuts, salt and cinnamon

Add the vanilla extract, maple syrup and coconut oil and stir well to mix thoroughly

Turn the mixture out onto the lined roasting tins, spreading out in an even layer

Bake initially for 15 minutes, remove, then stir in the coconut flakes and return to the oven to bake for another 20 minutes or so until fragrant and golden brown - you can check half way through the cooking time, and maybe stir it again to ensure it bakes evenly

I usually turn the oven off, then leave the granola in there to dry out and cool completely, but this can also be done out of the oven.

Store in an airtight container.  Enjoy customising it with your favourite toppings (mine include goji berries and raw cacao nibs).
