Lemon, Cashew & Coconut Energy Balls

These nutritionally dense, yet super light and zingy bliss balls went down a storm at my new year workshop where we were focussing on cleansing the body.  Lemon is a natural cleanser, so these little sweet treats are perfect if you're looking to cut down on processed sugar, but still enjoy something sweetly satisfying.  Cashews are the lowest in fat of all nuts, and they're also a great mood booster.  Team these with luxurious caramel-like medjool dates for slow-release energy, and you're onto a winner.   Vegan, raw, gluten-free, and free from processed sugar

Ingredients:

10 medjool dates (remove the stone)

1 cup raw cashews

1/2 cup raw almonds / ground almonds

14/2 cup organic unsweetened dessicated coconut

Zest and juice of 2 lemons (unwaxed is important, organic even better)

extra coconut for rolling / coating

Method:

Pop all the ingredients in a food processor, and blend together until they form a slightly sticky dough.  Take care not to overblend - its lovely to retain some texture with the nuts and dates.  Roll into balls and dip in coconut if using.  Keep chilled in the fridge
