Lime Coconut Energy Balls

A taste of summer! Zingy lime combined with the sweetness of coconut, cashews and dates make these energy balls simply delicious, as well as being a great source of nutrition.  Perfect for a snack, after-dinner sweet or for pre/post workout or yoga.  They are really quick and simple to make, and will keep well in the fridge. 


1 cup cashews

1 packed cup medjool dates (remove the stones)

2/3 cup unsweetened desiccated coconut (and a little extra as optional for rolling the balls in)

2 tablespoons freshly squeezed lime juice

1 teaspoon of lime zest


Place the cashews in a food processor and pulse until they are mostly broken down.

Add the dates and process until a dough like consistency starts to form.

Add the coconut and lime juice & zest, and process until well mixed together.

Roll into balls, you can also toss them in coconut if you wish, before popping them in the fridge to set.  Best kept in the fridge.
