Red Velvet Truffles

A healthy and very yummy version of red velvet cake in delicious bite-size bliss balls. Free from processed sugars, they are gluten free, raw and vegan, and are packed full of antioxidants, healthy fats and energy.  You can't taste the beetroot at all, so its  a great way to sneak some of the goodness in, without anyone knowing! Perfect after-dinner treat, pre / post workout boost or just anytime you fancy, as they're so good for you :)  I hope you'll love these as much as I do, and share them with all your friends and family.

Ingredients:(makes about 20 truffle size balls)

1 small organic beetroot, peeled and quartered (raw)

12 medjool dates (pits removed)

1 1/2 cups desiccated coconut

1/2 cup raw cashews

2 tablespoons raw cacao powder

1/2 teaspoon natural vanilla extract

pinch of himalayan pink salt / sea salt

extra coconut for rolling in

 

Method:

Place all the ingredients in a food processor and pulse at high speed until the mixture is smooth, well mixed and sticking together.

Roll the mixture into bite size balls, then roll in coconut.

Pop in the fridge for at least a couple of hours to set.  Keep stored in the fridge
